Satvik Dal Tadka – No Onion No Garlic

Dal (lentils) is the heart of Indian cooking—nutritious, comforting, and versatile. This Satvik Dal Tadka is prepared without onion and garlic, making it ideal for everyday meals, fasting days, or festival cooking. Despite the omission of these common ingredients, the dal is flavorful, aromatic, and deeply satisfying.

🌱 Ingredients

For the dal:

  • ½ cup yellow moong dal (or toor dal / arhar dal)

  • 2 cups water

  • 1 small tomato, finely chopped

  • 1 green chili, slit (optional)

  • ½ tsp turmeric powder

  • Salt to taste

For the tadka (tempering):

  • 1 tbsp ghee (or oil for vegan option)

  • ½ tsp cumin seeds

  • A pinch of hing (asafoetida)

  • 1–2 dry red chilies

  • 1-inch ginger, finely grated

  • Few curry leaves

  • Fresh coriander leaves, chopped (for garnish)


🥘 Method

  1. Cook the dal

    • Wash and soak the dal for 10 minutes (optional, speeds up cooking).

    • In a pressure cooker or pot, add dal, water, turmeric, salt, tomato, and green chili.

    • Cook until the dal is soft and mushy (2–3 whistles in pressure cooker or 20–25 minutes in a pot).

    • Mash lightly and adjust consistency with water if needed.

  2. Prepare the tadka

    • Heat ghee in a small pan.

    • Add cumin seeds, hing, dry red chilies, and curry leaves. Let them splutter.

    • Add grated ginger and sauté for 30 seconds.

    • Pour this sizzling tadka over the cooked dal.

  3. Final touch

    • Mix well and garnish with fresh coriander leaves.

    • Serve hot with steamed rice or phulkas.

  • Serve alongside roti/chapati with a simple satvik sabzi (like aloo jeera).
