For the gravy:

  • 2 cups ripe tomatoes, chopped

  • 8–10 cashews, soaked in warm water

  • 1–2 green chilies (optional, for heat)

  • 1-inch ginger piece, chopped

  • 1 tbsp butter

For the curry:

  • 200–250 g paneer, cubed

  • 1 tbsp butter + 1 tbsp oil

  • 1 small bay leaf

  • 1–2 cardamom pods

  • ½ inch cinnamon stick

  • 1 tsp cumin seeds

  • 1 tsp Kashmiri red chili powder (for color)

  • ½ tsp turmeric powder

  • 1 tsp coriander powder

  • 1 tsp garam masala

  • ½ tsp sugar (balances the tang)

  • 3–4 tbsp fresh cream

  • Salt to taste

  • Fresh coriander leaves for garnish

  1. Prepare the tomato-cashew paste

    • In a pan, add chopped tomatoes, cashews, green chili, and ginger.

    • Cook for 5–7 minutes until tomatoes turn soft.

    • Cool and blend into a smooth paste (strain if needed for silkier texture).

  2. Cook the gravy

    • Heat butter and oil in a pan.

    • Add cumin, bay leaf, cardamom, and cinnamon—sautรฉ until aromatic.

    • Stir in the tomato-cashew paste and cook for 6–8 minutes until it thickens and leaves oil at the sides.

    • Add turmeric, chili powder, coriander powder, and salt. Mix well.

  3. Finish the curry

    • Add ½ to 1 cup water (depending on desired consistency).

    • Stir in paneer cubes gently and simmer for 3–4 minutes.

    • Add sugar, garam masala, and cream. Mix and cook for 1–2 minutes.

  4. Garnish & serve

    • Garnish with fresh coriander and an extra swirl of cream.

    • Serve hot with naan, roti, or jeera rice.
